My hubby and I did it…We rented a condo rather than staying in downtown Honolulu/Waikiki. Found it online (I think under http://www.vrbo.com) and it worked out well. Saved some money on always eating out (we were able to cook in one or two meals a day and only splurge on dining out when we wanted). Everything in Hawaii is romantic lol. Take a drive along the coast and stop when and where you feel like it. Take a sunset sail/cruise. Go on a waterfall hike. There are tons of things to do, depending on your tastes and budget.
Also, for the actual wedding itself, we went through the planners at http://www.wedaloha.com, and can’t recommend them highly enough. They have packages for every budget, lots of locations to choose from (or pick your own)…They walk you through everything start to finish, and the photos were fantastic.
Aloha, and Enjoy!

Awww, romantic! Since you’re going to be in Honolulu, a great thing to get for your trip is an Oahu Fun Pass. You can get them online & they will save you TONS of $ on pretty much every activity in Oahu.
You can swim with dolphins, snorkel, attend a luau, go to the zoo, kayak, take tours, hikes, attend shows, & do pretty much everything there is to do in Oahu. When you get the pass, it gives you FREE attendance to every attraction!
Whatever you pay for the pass, it more than pays for itself. Here is a link to the ones I used before with my family, hope this helps!
